How to Analyze Acid Insoluble Ash content in Bakery and Confectionery Products

 

 This method is applicable for the determination of Acid insoluble ash in Bakery & Confectionery Product

 

REAGENT

  1.  Hydrochloric Acid (5N)

 

APPARATUS

 

  1. Blender
  2. Muffle furnace
  3. Boiling water bath
  4. Analytical Balance
  5. Desiccator
  6. Drying oven
  7. Silica Dishes

PROCEDURE

 

Previously determined Ash contained in Silica Dish.

 Add 25ml of 5N Hydrochloric Acid. Cover with a watch glass and heat on the hot plate for 10 minutes for boiling.

 Allow to cool at room temperature and filter the content of ash through Ashless or Whatman filter paper No:42 or its equivalent.

 Wash the filter paper with boiling water until the acid is free from the filter paper and Silica Dish.

 Take another new dried silica dish. Weigh and note the initial weight.

 Take the residue contained filter paper in a silica crucible. Keep the silica dish in a hot air oven and heat it till it gets dried.

 Then ignite the content of the dish over a burner till the content get completely charred.

 After dried the filter paper and Silica dish transfer to keep in Muffle Furnace at 550 ± 10°C until the filter paper changes to grey or white ash.

 After being completely converted to the ash, the silica dish placed in a desiccator to cool the dish.

 Cool the dish in a desiccator and weigh.

 Again placed to muffle the dish again at 550 ± 10°C for 30 minutes.

 Repeat the process of heating, cooling and weighing until the difference between two successive weighing is less than 1 mg. Record the lowest weigh.

 

CALCULATION

 

Acid insoluble ash in Hydrochloric acid percent by mass= 10000 (M2- M) / (M1-M) (100-W)

 

M2 = mass in gm of the dish with the Acid insoluble ash (or) Initial weight of dish + Acid insoluble Ash

M = mass in gm of the empty dish (or) Initial weight

M1 = mass in gm of the dish with the material taken for the dish (or) Initial Weight + Sample Weight.

W = Percent moisture in the sample

 

 

Calculation Example

 

Initial weight of Silica Dish (M)                                        = 28.1631 g

Sample Weight                                                                = 5.0362 g

Initial Weight + Sample Weight                                       = 33.1993 g

Final Silica dish Weight with acid insoluble ash (M2)     = 28.1685 g

Moisture                                                                          = 7.4 %

 

Acid Insoluble Ash (%) by mass                         =   10000 X (28.1685-28.1631)

                                                                                 (33.1993-28.1631) X (100-7.4)

 

                                                                        = 10000 X 0.0054

                                                                           5.0362 X 92.6

 

                                                                        =       54             

                                                                            466.35212
